"Unicorn Soup" to help boosting your immune system and help people who are recovering from illnesses. ❤️

One of my friends is recovering from uterus tumor removal surgery. So, I made this soup for her.
I call it "Unicorn Soup" 🦄 because of its vibrant colour, unique mixture of ingredients, and its nutrient dense quality. 🥔💜❤️🥕The instruction is as follows:
1. Sautéed Beetroot, Carrot, Potato, Onion, & a lot of herbs (Coriander Root, Chive, Garlic, Red Onion, & Bay leaves, Cumin).
2. Take out the Bay Leaves because they will make your soup bitter.
3. Add the vegetables to the blender, add vegetable broth, and blend until it is well combined and smooth.
4. Reheat it in the pot; then, season with Black Pepper & Salt.
Beetroot is rich in Vitamins and Minerals. Vitamin B9 is good for recovering patients and athletes because it helps with tissue growth and cell function and Vitamin C can help increasing immune system.
I notice that a lot of my female friends who reach 40s had uterus tumor removal surgeries. I think it is best to check your health every year and lifestyle changing; especially, the food you eat really impacts your health.
I will give you one more recipe that my kids request me to make. It is a Oreo Cheesecake so it is not a healthy option for sure.
But I adjust the recipe a bit to make it a little healthier.

1. Crush the Oreo and mix with melted unsalted butter to make the base and put in the refrigerator.
2. Use hand blender to mix Cream Cheese, Greek Yogurt, and a little bit of Icing together.
3. Pour the Cheesecake mixture to the base and top with an Oreo.
4. Leave them in the refrigerator for a few hours or overnight. Then, enjoy eating. 😋
There's no need to eat healthy all the time. We are not beasts LOL. Enjoy some dessert but keep it in moderation.
