4. 5 tablespoons simmered palm sugar (or use 6 tablespoons of palm sugar)
5. 2 tablespoons fish sauce
6. 1/2 cup tamarind juice (use 2 tamarind pods with 1/2 cup warm water)
7. Vegetable oil for frying

Preparation
1. Fry the eggs : Add vegetable oil in the pan, use high heat. Add the eggs to fry until the outside is cooked and crispy. Drain the oil and arrange on a plate.
2. Fry shallots : Use low heat. Add shallots to fry until golden brown. Drain the oil and set aside.
3. Fry dried chillies: Use low heat. Add the dried hot chilies to fry until puffy. Drain the oil and set aside.
4. Make tamarind sauce: Prepare the pan, add simmered palm sugar or palm sugar, fish sauce and tamarind juice. Simmer by low heat for 6 minutes or thick until it is satisfied. Then turn off the gas.
5. Put the fried egg on the plate. Topped with fried onions and fried dried hot chilies, then topped with tamarind sauce. Sprinkle with coriander. Ready to eat with hot steamed rice.
